Mixed Culture Saison aged in neutral & gin barrels then conditioned on Colorado wildflower honey & dandelion flowers.

I've wanted to make a saison with dandelions + honey for quite some time now and we did a very, very small batch for our first year's membership.

After some tweaks to balance the dandelions with our saison blends and culture I'm happy to finally release Changing Times to the public.

This is also our first neutral and gin barrel released which was very intentional. The Family Jones gin barrels botanicals are so lovely but pure gin would overwhelm the delicate dandelion aroma and flavor so about 30% of the barrel blend are neutral oak barrels.
